Spicy Sicilian Chicken

This is a wonderful and filling chicken dish you can make whenever you are craving something with a bit of heat to it.

Makes: 4 servings

Total Prep Time: 35 minutes

Ingredients:

1, 3 ½ pound whole chicken, cut into 8 pieces

3 Tbsp. of extra virgin olive oil, extra for drizzling

2 red bell peppers, seeds removed and thinly sliced

2 eggplants, cut into large pieces

4 plum tomatoes, cut into large pieces

2 Tbsp. of capers, drained

1 ½ cups of dried white wine

2 Tbsp. of flat leaf parsley, chopped

Dash of salt and black pepper

2 russet potatoes, peeled and chopped

1 rib of celery, cut into pieces

2 carrots, sliced into rounds

½ cup of Sicilian olives, pitted

5 dried hot chiles

2 Tbsp. of mint, chopped

Dash of crushed red pepper flakes
